It is also so, but so rich, that we recommend Broccoli cheese soup for any family celebration as a first course.
However, I know that many of you do have to go through the snowfall and low temperatures that come with those winter months, so here I bring you some warmth and comfort through this delicious and easy to make broccoli cheese soup.
As a child, I did not grow up eating this broccoli cheese soup. we make it easier by the use of home remedies.
INGREDIENTS of Broccoli Cheese Soup
1 French shallot, finely chopped
1 garlic clove, finely chopped
45 ml (3 tbsp.) Butter
4 thin slices of ham, thinly sliced
¼ cup (60 ml) all-purpose flour
A pinch of ground nutmeg
875 ml (3 ½ cups) chicken broth
½ cup (125 ml) 35% or 15% cooking cream
5 ml (1 tsp.) Old-fashioned mustard
2 ½ cups (625 ml) grated mild yellow cheddar cheese (about 225 g / 8 oz)
1 liter (4 cups) broccoli florets, cooked al dente and well-drained
Salt and pepper
Directions of Broccoli Cheese Soup
In a saucepan, soften the shallot and garlic in the butter.
Using a hand mixer, reduce to a bowl of soup before serving.
Cut the onion, potatoes, and broccoli. Save half the broccoli florets for later.
Bring the chicken broth to a boil.
Pour the oil into a large saucepan. Fry the onion over low heat until it is transparent. Add the potatoes.
Mix everything, then add the chicken broth, sugar, and simmer for about 10 min.
Add half of the broccoli, season, and cook until tender – about 5 min.
Pour everything into a blender, with the bouquets of raw broccoli, and mix everything for a few seconds.
(The homogeneous soup will keep a delightful texture thanks to the mixed natural bouquets).
Pour the mixed soup into the pan and add the grated cheddar. Mix until completely melted.
Serve it with a salad and your favorite bread
