  • 1 1/2 cups (225 g) unbleached all-purpose flour

  • 5 ml (1 tsp) baking powder

  • 5 ml (1 tsp) baking soda

  • 1 1/4 cups (310 ml) ripe bananas mashed with a fork (3 to 4 bananas)

  • 1/2 cup (125 ml) coconut milk (see note)

  • 15 ml (1 tbsp.) Lime juice

  • 1/2 cup (115 g) unsalted butter, softened

  • 210 g (1 cup) sugar

  • One egg

  • 5 ml (1 tsp) vanilla extract

Step 1

Place the grill at the center of the oven. Preheat it in the oven to 170 ° C (340 ° F). Butter a 23 x 13 cm (9 x 5 in) bread pan with a capacity of 1.5 liters (6 cups) and line it with a strip of parchment paper, letting it hang over two sides.
